The Christmas anchovies are made from this year's sprat catch. The anchovies are made by placing the sprat on barrels in a lake spiced according to an old recipe from 1911. The barrels with anchovies, spices and brine are then stored for several months in a cold room inside the mountain.

The storage is crucial for the unique Christmas anchovy taste which for many is the symbol of a real Christmas.
